I just soak em for 8-12.

Seems to work fine.

Altho simmering i do with CC adn popcorn.

All a matter of preference.....soaking is easier, less effort.

there are a few meathods,

1. meaure water and grain volume load and pc, this is the cleanest meathod to do but theres allot of starch in the mix because you dont rinse.

2. Soak for 8-16, rinse, drain and load. The reasoning behind this it germinates any spores so all growth is killed in the PC.

3. Soak for 8-16 rinse, simmer for 30 min, rinse, drain and load. The reson for the soak is the same as for meathod #2 but you pre cook to get the water content dead on.

4. Simmer for 30min rinse, drain, and load. This is the best meathod in my experience. You do evertyhing with no waiting for the soak but still get all the yeast out and the water content it dead on.

now if you dont soak it and go straight to simmer, will that germinate any spores so all the growth is killed in the PC. also for ya'll that use WBS, do you take out the black seeds or leave them, one WBS tek said take em out the other said leave em in. which do you do?
thanks

You can take some of the black seeds out if there is an abundance. Although, it is often beneficial to leave some of the sunflower seeds in. My friend has never cooked the grains before. He just soaks for 12-16 hours, loads, and cooks for 90 minutes at 15psi. Gr0wer, What temp do you simmer them at and how much water do you add?

I have done soaking, simmering and just PCing, all without any contamination, I feel that the onlying thing that soaking or simmering does is add water to the grain, and rinse off starch and waste time, I personally just load up the jars with the following measurments for Quarts without problems every time:

Rye:
200g Rye
220g Water

WBS:
200g WBS
130g Water

These measurments leave a perfect amount of room for shaking.
