Can WBS cakes fruit?

Seems like a simple question, and it is. I've just heard conflicting reports that it's too loose and will fall apart, and that casings are a must.

I used my wbs jars for casings. As soon as I emptied the fully colonized wbs into a plastic baggie it fell apart immediately with almost no effort. I'm not saying it isn't possible to fruit a wbs cake by itself but I can see how casings would be a much better idea for wbs. Just my .02.

kramer fruits wbs/verm cakes all the time...mixn' in some verm is best... but pure wbs cakes fruit too!

Fruiting Rye cakes now..holding together so should fruit..we'll see if they contam...if not I suppose WBS would work too. Maybe doesnt hold as well though..

Sweeeet, thanks guys. My cat just got herself 12 new 12 ounce jars with 16 lbs of WBS and a pressure cooker on the way. Oh baby.... she's one happy kitty.

I'd suggest casing them though, casings are great for yeilds. I'm just doing rye cakes cause they seem easier then PF cakes to me and I want to do cakes just for fun :smile:
