Pressure Cooker Question
    #3174703 - 09/24/04 01:32 PM (12 years, 5 months ago)

I just read the instructions for my pressure cooker (it's a Fagor, I know, but I couldn't find anything else) and it says I need a wire rack for the bottom of the cooker so steam can flow around each jar; according to the Shroomery FAQ, a wire rack is needed so the jars don't crack.

I have standard, one quart, wide-mouth mason jars. If I don't have a rack will that be a problem? Can I place a wet dishtowel on the bottom of the cooker so too much direct heat isn't transferred, like when boiling jars?

Thanks for the help.

I've always used a rack and the one time I didn't all the jars got soaked. Just me tho (I have a Presto)

By the way, the reason I don't already have a rack is because three quart jars will fit in the cooker (though it's a semi-tight squeeze) as it is right now. If I get a rack I don't think the jars will fit (they'd be too tall).

So it's not that I'm just really cheap or anything.

So your only problem was that it changed the water content of the jars? I'm planning on doing a single hole in the center of the lid filled with Poly-Fil, with a double layer of tinfoil while it's in the cooker.

Do you think that will be sufficient?

The divot that this guy I know has is really pretty flat and works fine. Before he ordered it, he was using a towel with good results.

Ok, I'm just going to use a dish towel for right now. Thanks.

Sometimes it's just better to switch to pints or half pints when using such a small PC. A doubled dish towel should work just fine. GL
