2 questions:
1. When the mycelium is exposed to light (and O2 and humidity) if the conditions are right it should start pinning. Does this only happen to the light exposed mycelium or everywhere (for example in a casing where not all the mycelium is exposed would it pin as well?)

2. On AFs last set of cakes, one cake pinned but then the pins didn't grow any further - any reason's for this? The other cakes did pin and grow shrooms.

in my dog's experience, when part of a casing is exposed to light, pretty much the whole network of mycelium will start to pin.
I can;t answer your second question without more details. what's the humidity at? How often is the cake being fanned?

I agree with your dog, since the casing is basically one big casing, exposing only portions of the mycelium to light should send the signal throughout the entire network to pin.
