i think i found my answer:

quote----"Sterilizing will kill off the beneficial micro-flora from your substrate and casings and in either case, it will have negative affects to either the nutrition value or contamination vulnerability."

a little patience and research goes a long way. Still.....will a 4 hour pasteurize really hurt??

Four hours will not hurt if the temperature is not too close to boiling.
