---pasteuration duration question----

Doing a search pasteurization and found this

Why not is not going over an hour important:??? I saw someone doing 4 hours on the advanced board. plz explain.

i think i found my answer:

a little patience and research goes a long way. Still.....will a 4 hour pasteurize really hurt??

Four hours will not hurt if the temperature is not too close to boiling.
