Pressure Cooker Water Levels

I have been searching for posts about stacking jars inside a pressure cooker and the ones I found answered all those questions. However, a lot of people said to use about an inch of water in the bottom of the pressure cooker. My question is ... if your using a rack and stacking jars inside the pressure cooker, do the bottom jars have to be in the water or can the rack be out of the water?

The rack goes on the bottom and the jars on on top of the rack. Put 3/4"-1" of water in the bottom. The rack is going to be underwater. :wink:

The jars dont need to touch the water, the steam under pressure is so hot that its all cooked quite evenly.

It's inevitable that the jars will touch water as most racks are only hold the jars about 3/8" off the bottom and that as I've found out is cutting it close but I myself don't use a whole lot more than that 1/2"-5/8" is what I average.

My rack would be about 3/8.

Jars always in the water.

I've noticed that the second generation pressure cookers are far more efficient with the water, they hardly loose anything.

I usually use 2" of water...I just have this fear of drying out and it dosen't hurt it lol
