I cased my cakes yesterday and they are now sitting in a tupperware container in a drawer. Question, do I need to fan the casing now, while I wait for the mycelium to grow a little, or only when I start to fruit it.

You have to leave a very small gap or holes, to allow gas exchange, but you will actually have to fan, at the time you will initiate pinning...Good Luck!!
