i dunno, after a not very extensive search i couldn't find anybody else doing it.
I thought mabey the risk for contams, or something would be to high

...and longer colonization means more time for other baddies to get a hold of uncolonized parts. Especially bacteria. You should just use a grain if you want to use bigger jars, like maybe hominy since that pretty much ends up in a solid mass and you can fruit them like a cake instead of casing, if casing is not for you (search for recent threads on hominy use and what it is and where to find it). But it would work, you might lose more of them (and each one you lose is bigger than just one smaller jar, so...) Hominy and other grain colonizes fast enough even in larger jars that it works out well. PF substrates might take a little too long without using a fast colonizer strain or some such adjustment to try and keep the 100% happening within a week or two, preferably shorter.
