Best would be breathable medical tape and foil over that.

You can leave covered until 100% colonized but I would take the tape off at about 30% colonization and then flip the jars.

You don't really need either. If your incubator is clean, the dry vermiculite layer will do just fine.

But it wont hurt it to leave it sealed with masking tape over holes, and foil after sterilization until colonization (then just leaving a single layer or two of foil over) right?

Tape sucks, don't use it. It is not necessary.

Use the foil though. That is just an added layer of protection against direct airflow into the jars.
