I haven't read anything about it, nor could I find much about it (hard to wade through all the references to PDA and other potato related things), but if I were going to venture to guess about how I'd do it, it would be something like this:
  1. Cut a fresh potato into 1/4 or so cubes, rinse lightly and drain, spray lightly or toss (as with a salad) with 5% sugar solution
  2. Place potato cubes on clean nonstick tray in single layer leaving air space between, and cook in oven at around 350F until outer surfaces turn slightly golden and are dryer and slightly skinlike to the touch (almost like making hash browns, sort of). This would be to keep the cubes in their cube form so they don't turn to mush, and work out more like a grain. The sugar solution in previous step was to enhance this action and provide the 'golden' effect as the light amount of sugar carmelizes.
  3. Let cubes cool then put them in a bowl and cover with warm water, soak for around 30 minutes to ensure they are well hydrated inside, but not so long as to defeat the 'skin' and make them mush.
  4. Drain well and put into jars with polyfil/tyvek filter lid (exactly as with grains) and a small layer of dry verm on the bottom to absorb any extra water later on. Try to not let the cubes stack evenly, you want to increase the air spaces between them as much as possible and the number of visible faces (maximum open surface area).
  5. PC jars as usual, 15 psi 60 minutes or 10 psi around 75-90 minutes. Remove from heat, let cool, etc etc (the usual)
  6. Inoculate with your favorite method (I suggest using liquid culture syringe, but any method should be fine), incubate, but probably don't shake like grain. Let colonize completely.
  7. Continue with fruiting either as cakes or in a casing

I might avoid any preprepared potatos (canned, etc) because they likely have added salt or preservatives, unless you can find a specialty brand that is 100% natural. Also some levels of salt seem to not have an effect (shown in using canned hominy, which has some salt in it) so if it's not that salty maybe it would work. Mostly you have to avoid the preservatives which are antifungal. Though I suppose the canned ones are already pretty firm and hold shape well and have a good amount of moisture. My idea of cooking the cubes was intended to not only create a rather structurally tough 'hull' so they could be treated more like grain, but to make the interior a bit mushier and easy for the mycelium to infiltrate while also being able to hold a bit of bonus moisture, and to break down some of the complex starch content into simpler sugars and starches.

And considering I made this all up and have no idea if it would work (besides that it seems like it would), it could really suck. I might try it since I tend to like to experiment and such, but if you want to try then just remember to post the results, and maybe some pics.

Fixed for happier linking. Also try the other spelling of "colonized" and perhaps the other spellings of "potato" if you didn't already.
