smell of WINE

I stored some jars in the frige for 15 days I was going to use them but they smell like wine. There was some water in the bottom of the jars.
Why would this happen?
Can they be used safely ?

the wine smell comes from fermentation, the watter issue is from precipitation/condensation and no, it would be better to start over, the pooled water can lead to a bacterial contamination and with the fermentation smell it could mean that they werent completely sterile (not always the case)

Pris is certainly correct and your best bet is to start over.With that said i have found that sometimes this works if there is vbacterial contamination.I pour straight peroxide into the jar and submerge the cake for about 30-45 seconds.then i drain and rinse the cake off with ice cold water,and then dunk over noight in the fridge in 90/10% water/peroxide mix.USUALLY this takes care of the problem,at least in my case it has.If the cakes not 100% colonized i cut off the non colonized part before any of this,then whhen i done i place it back in a new sterile clean jar .
Again though,if in doubt,throw it out.

Any sort of sweet smell is bacterial contamination. Throw it out for sure.

Uhhh... because you left wet, unsterilized jars for over two weeks. What did you think was going to happen?

If you properly sterilize them. However, jars like this rarely work. Best to throw them out and start over. Follow instructions this time.

Just reread your post and saw that you havent even innoculated yet.In that case ignore my advice it is not meannt for you.Yes best advice is to start over.I always reused jars with no problem just wash them real well several times with hot hot water,bleach,and plenty of soap(antibacterial soap doesnt hurt).Then i run them through the dishwasher,and i have never had a problem.

Yes I agree redo. Just wash like you normally wash dishes no need really for antibac soap or bleach IF your PCing the jars, if steaming/boiling jars by all means antibacterial/bleach is a great combination for sure! :wink:

Im sorry i should of been more clear. The jars are innoculated and all the grain is covered. Im going to trash the project
