sour smell no visible contam

my friend is growing in poor man terarriums (2 liter coke bottles), cakes of brown rice flour and verm.
he went out of town for 2 days and did not fan.
when he came back all the bottles were fine except one had a sour smell coming out of it.

i've read up and it seems to fit with the rotten apple / fermenting wine smell that bacteria / yeast causes.

he threw the bottle out, but not before he sniffed the bottle and the cake.

i have a couple of questions:

a.) is his health in trouble? is there any risk at hand for serious bacteria illness? or are most bacteria on brf/verm harmless?

b.) how much bacteria can grow in two days without fanning? is it severe?

c.) how did bacteria end up taking over the cake when the cake was pretty much done with its first flush?

d.) could it be yeast? and if it is is his health in trouble?

oh and to continue from above,
there were no visible contams.
the mycelia were really fluffy at the base of the mushrooms.
also the mushrooms looked like they were starting to die.
(dark heads, limp shapes)

so he just smelt the bottle? I wouldnt assume his health is in danger. Most bacteria are harmless, until they either get somewhere we dont want them (ie food or a wound, or a lung).
b) lots, depends on the conditions. Give E.coli the right conditions and it will double its population every,say, 20 minutes. Bacillus can do it faster, some slower.
c) given and inch, bacteria/yeast will take it all.
d) yes it could be yeast, but I cant tell you if his health is in trouble. Does he look sick? Im fat white and ugly, but I think I look a healthy fat white and ugly. Well I think so.... no one talks to me, and the mirrors... well, they just tell lies.... big aweful lies... sorry.

if a cake/casing dont smell good, Dont eat it! :smirk:

thanks for your swift reply.

he put his nose close and sniffed the bottle.
and later after he had cleaned all the mushrooms and verm at the bottom off in prep for a second flush casing, he put his nose pretty close to the cake and gently sniffed the surface.

he said he noticed that the caked smelled sour all throughout and so he threw it out.

how much exposure would it take to get bacteria or yeast into the lungs?

Exposure to the end of a large sharp pole or stick would get them into the lungs... and probably a few other organs if that was you worry, and it wouldnt take many organisms.

if you meant by inhalation, well (NOTE: im not an expert on this by any means) then bacteria arent a big worry, they tend to stick to things. Some bacterial spores can be a bitch if they into the air (anthrax is one that comes to mind, but it has to be properly prepared to get deep into the lung, unprocessed anthrax spores are generally too big to get deep enough into the lungs to start a respiratory anthrax infection).
Moulds can get into the lungs and cause mayhem, farmers lung (man I remember uni!!!) is a hypersensitivity reaction to inahlation of fungal spores. Other spores can go places you dont want, but a good immune system will keep most down.
Yeast.... well, candida can get into the mouth, throat and I think lungs, takes time though wont drop you dead..... SOme nasty arse yeast can get into blood and bugger the heart valves? But... like I said..Im not expert. :tongue:

As said above, actively growing bacteria and yeast aren't much of an inhalation hazard.  It's the fuzzy stuff that you really want to avoiding 'smelling'.  Sounds like you did exactly the right thing.
