PCing for an hour. Is it needed?

I was talking to my father today about pressure cooking and how long is necessary. He had his degree in Biology, and said that at the temp inside there at 15psi (256F), all the bacteria should be killed after 15mins. Can anyone give me some good info on why we do it for a whole hour?

it depends on the substrate and the volume... I have PCd 5lbs bags of WBS for 45 minutes and had a very low contam rate, at 1 hour there were no contams.

I've noticed especially with WBS because of it density requires a bit longer than other grains. The center of the bag/jars substrate needs to be at 250F. for a period of time and it takes time for the core temp to raise to this temp. Thats why I always like to be on the high side when it comes to timing :wink: GL

Exactly. The biologist is thinking of sterilizing petri dishes, which is what biologists work with most of the time. This is no different than microwaving something and finding it still frozen when you bite into it.

By the way, 250F for an hour is *not* enough to kill every organism. There are thermophylic bacteria that can survive that, but it's very unlikely you'll have any in your substrate and in practice 250F for an hour is all that's needed to sterilize mushroom substrates.

I have always Pc'd my jars for 2 full hours. Of course I have a huge 21 quart PC. But even with my smaller PC I stiil use 2 hours. Mabey it is overkill but I never deal with bad jars.

there is some very useful info in TMC and GGMM (Stamets' old and new testaments) on the pros and cons of long PC time.

i forget the exact details, but for home hobbyists, there is no likelihood of damage with one or several hours. it's with woodbased substrates that a loooongass time (like 12 hours) can make it break down and become unusable.

that's why i also like to be safe rather than sorry. what's an extra hour compared to all that preparation time and the weeks of worry until they bear fruit?

I PC for one hour (after pressure is attained).

When pressure is attained I would be pretty confident that the jars are close to their terminal temperature anyway since it takes quite a while to get to it (I'm not Mr Full Heat straight away).

I'd say there would be an argument to the length when you take into account heating it up and venting the pressure. Its very easy for a one hr PC to be more like 1.5 hours after letting it naturally vent.

That being said, I'll stick to one hour. Rather than be safe than sorry as shirley puts it.

Well after Pcing for 2 hour for 5 years I can tell you I have never ha any problems in a long Pc cycle.


But that doesn't include the hand full of times I fell asleep and woke up to POP HISSSSSSSSSSSSSSSSSSSSSSS.......AUGHHHHHHHHHHHH SHIT

I had that happen while pastuerizing poo once... burnt poo is much worse than fresh poo in large quantities...
