Top old-school mushroom uses in cooking...

Old school uses. The top, I would have to say are:

- Fried mushrooms with onions for burgers and steaks (Button Mushrooms)
- In salad (Button Mushrooms)
- Grilled or baked Potabella's Usually marinated irst and can be used in salads and other dishes too, aside from being a full side order itself.

Anyone want to add some more? No fancy stuff, just basic old school ways of cooking this simple food.

I sautee my chanterelles with garlic and butter, then make chicken stock, add corn starch to thicken it up like a gravy, and put that along with the chanterelles on toast.

I've always been a fan of mushroom chocolates, but I imagine you're not talking about those kind of mushrooms.

Julienned shitake caps sauteed in olive oil with minced garlic and shallots. For general use.

Lepiota steaks...

Place cap, gills facing up, on cookie sheet.
Pour melted butter on top. add salt + pepper.
Broil for 30secs.

Lightly fry mushrooms in butter.
Add generous amount of whole milk (not enought to cover shrooms)
Season with salt & pepper.
Reduce until you have a thick, creamy sauce.

Voila! Creamed mushrooms.

Delicious!  :smile:

Wrap pices of chanterelle in bacon. (1/3 of a strip) Broil or pan fry until the bacon is crisp. Yahooo!
