Freezing grain ok?

So I made a few jars of WBS, put them in my PC and sorta broke the seal. Can I freeze them until I get a new PC? Will freezing the grain rupture the kernels and make it into a slourry or something?

I dont see why it would be a problem. But then again i have never done it myself, and have not heard of people doing it. Just remember to let it warm up to room temp before you go to put it in your pressure cooker if you do decide to do this.

Freezuing causes expanding and retraction in the size of the grain making air circulate.
It could bring in contams when it is thawing and retracting (making a vacume. Otherwize it should be fine.
Ruptureing the kernles might even be a good thing.

It wouldn't matter about contams, it'll be PCed. I just thought all the water might go to the bottom if the grains lost their shape.

Freezing it will make it mushy. Maybe you can get away with it though.

I had an idea once that freezing could be the way out of using a PC. You know, when things freeze the cells walls rupture. So my thought was by freezing the substrate the contaims would die. It worked to some degree and I would have persued it more except that I couldn't get the substrate formula right. The Jars with just grains held up well with slighty less water. They didn't get mushy unless they were very wet to start with.But just from expereince you will be alright. All though I once kept jars in the fridge for a couple months before PCing and had no problems.The seal broke on my Pc and the jars had to wait until I got a new one. So mabey you can just keep them in the fridge.

Freezing wouldn't kill endospores or contam spores though.

No what I did was soak the grain 24 hours to germinate the endospores. From the small amount of experiments I got better then 60% of the jars to make it to fruit using freezing alone as a sterializing process.. I think it may be reasonable to say that it might work. But I would need to do some more tests.

Wow! 60% is a lot better than I would expect. That's actually pretty usable then. Maybe freezing could replace boiling for the cheapasses here.

Yeah I was thinking If a person was to mabey add Ho2o to the presoak that might make the difference. Who knows

How long till u get a pc??? if ur getting it like tomarrow just let them sit or throw em in the fridge till tomarrow. If im reading correctly then u were pcing the jars at the time it broke? If thats the case then u might have already sterilized them. A little more info and we can more accuratly help u.

Yeah I broke the seal pretty much as soon as I started PCing the first batch, but I left it running anyway because there was still a fair bit of pressure (~5 psi or so) in the PC. That batch I innoculated and is ok so far. I've frozen another 6 jars, I'll have my PC in around 3-4 days. I'll report back on whether it worked if anyone's interested.
