It will just take longer to germinate and colonize.

Unfortuently the longer it takes for the mushroom mycelium to take hold, contams will have a larger window to germinate themselves.

Agreed.It will take longer.If going for optimum temp keep around 82-84?F.The substrate in the jars will be a few degrees warmer than the area outside the jars.

During fruiting 70 is considered low, but I like the lower temps to get the pins started and then raise to 74.

70 degrees start to finish works fine.

Many times it's not worth it to rig up any sort of temperature control setup. I wouldn't even bother with an incubator unless you are trying to grow mega-pounds of mushies. If you're just looking to grow one tub or a dozen jars, then an incubator would probably be a waste of time for you.
