PC question

ok, generally, how much water is put in the PC?...In the PF tek it says to bring the water level up to about half way up the jars and then to make sure the boil isn't too vigorous so the water won't splash up into the jar holes. In a PC I can only imaginne that the wayer would be boiling like crazy, so how is this not a problem in a PC? Does the tinfoil ofer the tops of the jars really keep out all this water?

I usually use a little under half way up the jars. an inch and a half to two inches of water. the tinfoil usually does keep the water out but sometimes one or two jars out of eight or ten will be too wet to use. it happens.

1 1/2in water for 60 min. run. I put 2 inserts in the bottom to keep 1/2pt jars out of boiling water.Add more water for longer run time.Just don't water up higher than half way up jar.The tin foil works You 'll be cool.

Ok listen up water halfway up jars is for boiling them not PCing them. When PCing you only need 3/4in. water in the bottom, also as long as you don't let excess steam escape during PCing the water should not boilover as the pressure keeps it from boiling. When using a weighted PC do not let the weight giggle more than 5 times a minute (4 times a minute is optimum) in order to keep pressure regulated at 15lbs. Any more questions just holler Theres absolutely no reason to have water deeper than 3/4in. if PCing BTW. GL

I use about 1 inch, no higher. I agree with hyphae...
I did it with water more then half way up the jars the first time. Didnt turn out so hot.

cool - cause I'm PCing with a PC without a seal. I know the temps in there are a hell of a lot hotter than with an ordinary pot even without the seal....

No seal, no pressure -> the temperature stays the same as in a normal pot.

Yup i totaly agree with Hyphae
No pressure no hotter then 212 F
Ever look on the side of a box of mac and cheese?? It gives different direction for situations when you are at higher elevations.
Here is why....... The lower the pressure the the lower the temp nessary to cause water to boil. The higher the pressure the higher the temps to cause water to boil.
The whole reason we pc is to get the temps up to the 245 260 deg range.Some contaims can survive temps upto 230 degs. Pressure is absoulty nessary. Sorry
