Are dried-out truffles/mushrooms harmful?
    #3074930 - 08/31/04 07:06 PM (13 years, 1 month ago)

Hey, this is my first post and I'm kinda embarassed that it's such an obvious sounding question. I've had a poke around the forums and the links to resource sites and I'm a little overwhealmed by it all. I know that mushrooms and truffles can be "prepared" by drying them out, but it's sounding like this is a process that requires some sort of agent or specialised process.

What I need to know, basically, is whether or not a bag of mexican truffles I left out of the fridge for a few days, and that have now gone black, are going to kill me or make me puke up a lung if I take them. Does the same apply for mushrooms?

Sorry for the totally novice question, thanks for your time.

fridge or freezer? I've heard of frozen fresh mushrooms going black and to mush when thawed...I have no idea if they are still good or not tho

drying is not required as long as you can keep them from rotting or molding...there is a rumor that heat is bad for shrooms and thats why there are special techniques...I say rumor cause I've dried out at full strength in a dehydrator and didn't notice any loss in potency...that said I still only use about 110 F for drying only cause I've had shrooms that would not fully dry out at 95 F(the lowest setting on my dehydrator)

Well, I bought them at a festival, but it was some deal where they were giving away three bags for the price of two. Me and a mate managed to take care of two of the bags, but I only found the third when we were packing up. :S

They sound rotten, I could be wrong. Usually they'll dry after a day or two in front of a fan... and if they go more than 6 or 7 days without drying, they will begin to rot.

Use your best judgement.

It also depends on where you are in the world. The air is dry enough where I am that I don't need to use a dehydrator at all. Within a day in front of a fan they're almost cracker dry.

As for your mushrooms, they sound rotten. Would you eat food that had turned all black and gross looking?

Truffles will last for 3 weeks in the fridge, or about a week (I think) in the open air.

With mushrooms its about a week in the fridge, or maybe 24 hours out of one.

Drying them will preserve them for much longer timescales.

Cheers for all your feedback, I think I'm going to err on the side of caution on this one. I've been feeling rough since I got back, and I'm not going to chance making it worse by eating rotten fungus
