So far I'd have to say morels, either in rib roast gravy or stuffed with garlic and bacon under the skin of roasted chicken.

Of all the mushrooms I've had, I'd have to say I like the Agaricus bisporus the best.
Wood ear second best.

i love morels, i dont like any other shroom for taste....that i know of, im sure some of you here could cook up some awesome gourmet mushroom species that i would enjoy, but for now all i like are breaded morels fried up in some butter(simple cook job, i know), its almost like a meat to me...kind of.

I love chantrels the most. My friends grandma picks baskets full over the season. King oysters are nice. But I can cook one mean Blue oyster. I make em taste like steak some how.

Hi. Well, I personally think morels (morchella esculenta) are great. I usually only find just 3-4 small shopping bags full in the same place and same time every year. I enjoy them either sauted with garlic by themselves or over pasta. But my favorite is the shaggy mane (coprinus comatus). Those I usually find just driving around and spy them out of the corner of my eye on peoples lawns or the side of the road. I immediately pull over and gather them up. (I have a "Warning: I brake for mushrooms" bumper sticker) Those I coat with breadcrumbs and saute either by themselves or with eggs.

mmmm, damn sounds delish! i never actually tried any other shrooms, no one i know eats anything but morels. i should grow some nice edibles, then cook them up with that recipe you use to make it taste a bit like steak. i wonder why mushrooms taste meaty?

I fry em dry till they brown then I add oil and red pepper flakes. Maybe some garlic. Salt and pepper also. The thing is to get the outside crispy. The small babies are best for frying.

I want to grow the Blue oysters most of all, after reading about them I realize that they are PACKED, with good stuff like vitamins and minerals.
And mushrooms have the largest ammount of PROTEIN in the vegtable kingdom, after soy.
I dont know where hemp stands then because I KNOW that hemp has a little LESS protein then soy, but its a higher quality protein.
So where that places mushrooms , I dont know.
I have been reading "The complete mushroom book, The quiet hunt....BY Antonio Caluccio, its a great book, I just wish he spent more time talking about cultivated mushrooms, and the methods, but he is an old school italin picker, and for a rime he didnt even accept cultivated mushrooms.
Its still a great book, picking and recipes is what he focuses on though.

Well, I love grilled porcini served with anything! Also roasted chicken stuffed with chanterelle and dried apricot stuffing is pretty damn good.

I would also like to vote for Morels and Chanterelles. But, cultivation candidate wise I would have to say Shiitake... Some oysters are excellent also, especially the king...
It is all a personal taste though and highly depends on how they are cooked, and what they are served with...
Mmmmm... Morels... Got me salivating...

Recipes at morelheaven.com sound real good. I haven't had a morel in over 12 years, I guess I ought to go hunting. They used to show up every spring on some property my grandparents used to have, in relative abundance. Wish they weren't so difficult to grow indoors.
In other words, I'd go with morels. But I haven't tried very many others.

Where can I find a pic of these "Blue ?yster" mushrooms?
For me..the Morel is like a fine spring fiest..I find them while out trout fishing and bring home the twin bill harvest. I did have some kind of wild mushroom pallif in Sequim, Wa. in March that was melt in your mouth woodsy wonderful!

Here is a blue oyster pic that really motivates me to grow them. I love eating anything fried with garlic , and I hear these taste are great for frying. But I also notice that alot of people seem tom prefer the King oyster over the others.

though morels are still my favorite, i just cooked up some Lion's Mane we found in the woods yesterday and mmmmmmmm it was good!!
