    #3067442 - 08/29/04 11:33 PM (19 years, 6 months ago)

I'm gonna be making some jerky, but I was just wondering what type of beef I should buy for it.

Thanks!

pemmican sucks ass. i just had to say that. i don't like really lean jerky...i want it to be a little soft after it's cured. flanken steak is ok. also called shortribs...

First of all, whatever you do, you must make sure the meat you buy is "choice" and not "select".

London Broil, Inside Round, Top Round = same thing.

Bottom Round, Rump Roast = same thing...

You might want to try Tip Roast. This may be called Sirloin or Round cuz its between the two and would make a nice jerkey.

Tip roast or steakes are also called "milanesa", of you live near lots of mexicans...

MOST important part is to make sure that jerkey meat is cut cross the grain... With the grain jerkey is impossible to chew.

Is this beef typically cheap?

Yeah, I'm definitely gonna take his advice. I just need to get some specs on meat prices, I'll go out tomorrow and check.
