The mold spores could've survived the initial sterilization, and started to germinate. Re-sterilizing the jars again might not do anything.

I'd just start again, especially if you want to conserve spore water.

why dont ya just buy yourself some more rice and do it all over again... i'm sure you got some vermiculite leftover...remember your low spore count;)
