Does a Pressure Cooker Boil?

And I can hear air coming out the ball on the top but I don't see steam.

Some have gauges to tell you how much pressure but the general function is that the metal "ball" thing is a specific weight, it is calibrated so that assuming the seals are in good condition X psi (whatever the setting is) pressure is required to come out of the hole to move that weight slightly up (with air) so that the air can vent and maintain pressure at that specific level.

You will find that, with pressure cookers, you can bring something uptoa boil really quickly on medium or low heat, and it will stay fine once it starts boiling on really low heat.

Think about all that heat that escapes on an open pot. You introduce heat on the bottom, and it basically releases itself out into the air on top.

With the PC theres no circulation. Once you get it boiling, the heat doesnt escape, its trapped in. Therefore you only need a minute amount of heat to keep it in the desired range. (way above boiling, enough to kill bacteria.) I think a good rule is: It shouldnt be shakin' like the pope. (He has alzheimers! What topical humor!) But it should be active. I suggest once it starts boiling, set the temp ever so right so that its slightly shaking, but not getting wilder andw wilder and boiling over. Its really a judgment call.

Utopian glory is right. If it has a pressure pin, i.e. one that it supposed to pop up when the pressure is right, try to find a temp that doesnt make it blast full steam out of the hole, and also doesnt make the pin fall back into place.
In my opinion, stand by the stove with a beer, and adjust until you find a medium. Find a good low setting and put it on it for a few minutes. If the pins up and it is not going crazy, you're perfect.

Yes,and the steam released biuld pressure because it cant escape!

The weight giggling 3-4 times a min. means you are regulating the pressure correctly. Keep the heat at that point :wink:

Most cookers have something called an "over-pressure plug" in the lid. This thing will pop if pressures get too high to relieve the buildup before something nasty happens and the whole thing blows up.

Get your rocker rolling and rattling then back off the heat a 1/2 or 1/4 step at a time until you get it to the point where the rattle isn't "violent." You can actually turn the heat low enough to make the rattle stop and then turn it back up in increments until the rattle kicks back in. Then remember the temp setting on that eye for your stove and use it in the future after you have built up the pressure in the cooker.

Excellent comment and is how it usually works out everytime I PC :wink: , one important note though you never want it giggling excessively which is anything over 5 giggles per minute, you see when the weight isn't giggling the pressure goes up and when it giggles it releases pressure. You will also want it to giggle at least 3-4 times a minute that is your indicator that pressure is being maintained. :laugh: Simple enough eh? :wink: VERY IMPORTANT: let the steam escape for 3-4 minutes to void the PC of dry air pockets before placing the weight on as moist heat requires much less time than dry heat AND is what you want, I say this because someone mentioned earlier that just the weight giggling even without steam is good enough which most people know is definitely NOT TRUE! :wink:
