Well, I have seen a few spots where the mycelium is growing but i wasnt really trying to break the rye up just to check how much was growing. So i guess i should quit doing that then?

And chitlins are pieces of pig intestine that have been cleaned and cooked. Im not real sure how they cook them but I do know thats what they make them from.

If you fuss w/ them a lot, you may have very inconsistent results. Depending on the degree of the disturbance, it could take 24-48 hours or more to resume growth. If you want to get reliable/reproducable results, take yourself out of the equation as much as possible.

It was hard for me to cope with. Never could sleep on Christmas Eve.

Good luck w/ the project. Rye is my fav. Smells so good cookin'.

Water will condense if there is a temp difference. Are you heating the bags from the bottom? That would do it and would be normal as far as I know.

Yeah im heating them with warm water from beneath. Using a aquarium heater, that is why i move the bags alot cause i have a thermometer on top of the bags and beneath to monitor the temps, and of course ive got to pick one bag up to check the temp. But i guess i should just use the top one and leave the other alone huh?
