My Grandma's Sweet & Sour Soup * 1

If grandma were alive, she'd be proud to know that this recipe will live on.

I'm making 5 gallons of soup. I've never made less, but if you want to divide by 5, feel free.

The ingredients: (all shown except Sugar, Salt & Pepper)



10 pounds Flank Steak (or Skirt Steak or a combo)
1 Small & 1 Large Green Cabbage
4 Large Vidalia Onions
14 Lemons (or enough to get 3+1/2 cups pulpy juice)
4 (34oz) Cans Tomatoes (as shown below)
5 pounds white cane sugar
Salt
Black Pepper

First, lay out the meat and cut it into 3/4' wide strips (with the grain) as shown:







Then cut the strips into 1"-2" pieces as shown:



Put it in the pot and cover with water an inch or so over the meat:



Add 1/4 cup salt, cover and simmer VERY LOW for 90 minutes.

Then, open your various canned tomatoes:



Break up the whole tomatoes spoon size and add the entire contents of all cans to the simmering meat with
2+1/2 tablespoons of black pepper, cover and continue simmering while you cut and juice your lemons:





Add 3+1/2 Cups Lemon Juice to the pot.

Now cut up your onions as shown:





Add them and give it a stir, cover and continue simmering VERY LOW for 20 minutes and cut up your cabbage as shown:







Add the cabbage to the pot and stir it in.  Continue simmering while
you add half of the sugar and stir well. 
The balance is crucial, so start tasting after half the sugar is in, then taste as you add.
You'll get to a point where it stops being sour.  That's almost when you stop adding sugar, but
keep going until the soup just gets a bit more sweet than sour.

Finish simmering uncovered until the cabbage is tender and the meat begins to get stringy.
Remove the fat by skimming with a ladle.



You'll know when it's ready, keep tasting.

Total cooking time: 3.5 hours

Serve and enjoy!

Ive had similar soups and let me say that theyre damn good...

No, not "a mad amount", just right. Try a 1/5th batch and see.

I've never noticed this recipe before, but this actually sounds really delicious and simple, I may have to try this, this weekend. I love sweet/sour soups, have you ever made it spicy at all?

Nah, I wouldn't do barley in this soup.  You want a watery quality to this.  Barley will absorb too much liquid.

I almost always cook my barley separately in salted water, then add it to the main soup, in order to prevent it from absorbing the soup liquids.

That kinda defeats the purpose of having barley in the soup. Who needs barley-flavored barley? Yuck!

Now that winter's here and therefore soup weather, try this soup without modification, then if you find it lacking heartiness, experiment.

Meanwhile, I'll get going on "My Mom's Beef & Barley Soup" - That's a real hearty one! Nothing beats marrow-filled bones! YUM! :awebig:
