Is it simply that more air exchange = better? Is there a point when it starts doing more harm than good?

If you fan enough to dry out your cakes/casings then yes, but that shouldn't happen if you mist every once in a while. Other than drying I don't see what harm more fresh air can do, that's all they get growing in the wild.

Like in nature the more the better as long as RH is keep high thats why I always mist slighty after each fanning. Transpiration is what makes them proliforate!!!
