Poo/straw with coffee; lime percentage?

    So the last time poo/straw was used, about a tablespoon of lime was added to 1.5gal of water during pasteurization.
      My bud wants to experiment on another poo casing.  He'll be using coffee in the poo/straw mix.  He' s read lime should be added at a 5% volume ratio to the rest of the substrate for pasteurization.  IF this is done, then, should he add lime to the pasteurization water as well? 
      He's worried about burning the myc. with a too basic substrate.  How careful should one be with lime?  Is it  so basic that, like bleach, a little over accepted ratios will cause failure?  Thanks very much all!  :grin:

Mushroom mycelia will easily colonize a very base substrate. I use hydrated lime in pasteurization baths at a rate of 1/2 cup for ten gallons of hot water. This gives the bath a ph of 9-11. The mycelium then rips through the straw like wildfire. Get some ph test strips and test the water with coffee added. Add lime to raise the ph. Be sure to use hydrated lime, as it's water soluable.

Too much lime could cause the substrate to become cement-like and not allow the mycelia to gorw properly. If you have hurt your growths from bleach from sterilization, then there is something else at hand. I Usually sterilze with hydrogen peroxide, then a 20% bleach solution, then alcohol. I never had a burning issue.
