pressure cooker problems

hey all, i am having trouble sterilizing my jars via pressure cooker. i have the budget version pressure cooker (weight on top of the cooker) and it did not come with a manual when i got it, since i purchased a used one. i do not know when the pressure cooker is actually working because the weight does not "suck" or stick to the top when i am boiling. how much water should i put in the cooker? and how do i know that it is REALLY working? i just want my jars to be sterlile before i inoculate. also, i have pint sized jars instead of half pints, and i was wondering if it would make a difference if i just put half substrate and fill the rest of the jar with plain old vermiculite. cuz i know it will take a lot longer to colonize if i use the whole jar of substrate.

WELCOME TO THE SHROOMERY DUDE Every PC I have used the weight on top does not Stick to the pot??? Wtf The little weight should make a wisp wisp wsip wsip sound. it lets small amounts of steam escape. That is how it regulates pressure. The weight will eather just set on top or it will push down then slip side ways and lock on but still remaine loose. The jars sould not set directly on the bottom of pot. They will break. You should have some sort of Divit between the jars and pot. I use 2 butter knifes with a plate on top. then place the jars on the plate. Make the water level about half way up jars. Jars have to be PC'd for 1 1/2 hours no less. If you are using whole grains time must be 2 1/2 hours no less. And don't start you time in Pc until the wisp wisp sound is heard. You must get it up to temp first. And you should still fill the bigger jars to with in an inch of the top. I you fill them only half way then the dry verm will suck alot of water out of your cakes while in PC. Making for small fruiters. And bigger cakes are very COOL I personaly only use straightsided pint jars when I am making cakes.

5/8-3/4in. water in the bottom is all ya need. 1/2pt.jars only need 45-1hr. @15lbs. and like Fucknuckle said time doesn't start until the weight giggles and IMPORANT set the heat so it only giggles 3-4 times a minute THIS is what builds pressure, excessive giggling/wisping will allow pressure to drop and water to excessively boil resulting in water loss. This might be a bit too much for quart jars. I use 1 hour straight for 1 quart jars.

I use 60-90min. for rye depending on how packed the PC is always. WBS gets 90min. every time except when really packing the big AC-LAB sterilizer with bags then 120min. is sufficient @15lbs. GL
