I would follow Thors advice to flip only when the bottom requires it becasue if you were to do this right off the bat you would get little substrate kernels in your oh-so-clean verm layer and possible contam the whole jar (esp. if you removed the tape). By doing this later in jar life the top of the jar is usually colonized and therefore more contam resistant.
