Birthing Cakes

I was under the assumption that I should have birthed my cakes as soon as the cakes were fully colonized..which they are. However, I have been going through the posts and came across a recent thread where the advice was given that one should wait until pinning has started before birthing the cakes...pinning had not started on mine. I birthed five of them, and dunked them for about fourteen hours. Is there anything I can do at this point to help ward off contamination?

You don't need to wait for pinning but it is always good to let the jars sit for a couple of days after the outside finishes so the center of the cake can finish colonizing. If it's not done in most cases pinning will start after the cake finishes colonizing

Whew!!! That's a relief. I gave the ones that were done between three and five days after colonization before birthing them. When I wiped off the dry vermiculite, they were colonized through and through. How long does it usually take (roughly) for pinning to start after birthing them?

It can take up to two weeks but usually within the first week.

It also depends on the conditions.

Light and CO2 Levels are said to initiate pinning, as well as a cold shock...
