I dont know too much about flipping cakes upside down, but I can answer a few of your questions...
1st: You CAN leave 24hrs of light on the cakes, its just not nessacary. 2nd: PF cakes should have near 100% rH (relative humidity) 3rd: Those "speckles" you see on your cakes is most likely vermiculite. If it was smoething bad, say mold, it would spread and consume the cake. Plus it'd probably smell... 4th: AFOAF didn't prop any cakes, he let nature take its course. They came out fine... just needed to be a little cleaned.
Good luck with everything.

1. Shrooms don't use light to produce food like plants and only need light to induce and point in which direction to fruit. It's been shown that shrooms grow slightly faster in the dark and need as little as a few seconds a day anyway so there is no need to for 24 hrs of light so 12/12 is fine.
2. Vermiculite does NOT have green flakes so scoop that shit out of there before you have lots of green flakes.
3. I don't really understand whats going on with your upside down cakes but i'd flip'em right side up.
4. As far as humidity.....post casing/prepinning-90%, primordia formation 95-100%
Hope this helps, good luck, & read more

Dito with the light. They grow faster in the dark.
Flipping the cakes, is just to entertain yourself(IMO). The Green stuff sounds like mold. Remove the cakes with the green. Cut off that section and a little more to be safe. Then dunk in bleech(100:1) 5-8min. Rinse off and lightly salt area. Send the wounded guy back into the war. He should be fine...Peace
