All Portabello are, are overgrown criminis! My supervisor at work used to have a job where he grew them commercialy. Hes getting me some spawn here soon!

As crimini they taste stronger, kinda rich and earthy, Letting them go to full fruit or "portabello" changes the flavor totally, they taste milder and meaty. I like them harvested as button sized crimini for flavor to quantity ratio...thats all

They are the same as button mushrooms, jut older and maybe a brown variety.

The local boy scouts have a mushroom manure sale every spring. Usually mushroom manure is sterile but I don't know where they get theirs. Eveybody that gets it ends up with huge portabellos in a few weeks.
