10 PSI pressure cooker

Everything I read says to PC at 15 PSI.My problem is that mine is only 10 PSI,nothing lower nothing higher.Can I still use it to steralize my PF jars?If so how long should I PC them for?Thankx!

just give it an extra 10-15 minutes to achieve the sterilization...

yes... if you were working at 5psi then you would add and extra 15 minutes to that making it 1 hour 30 minutes... just make sure you have enough water in it, at least 1 inch, the jard are not directly on the bottom (a rack or a dish towel under them) and once you hear the hissing turn the heat back to about medium, if the hissing stops then raise it a little at a time until it starts again.

I got screwed with one of these too (Mirro brand? From Wal-Mart?). I used it anyway, and so far did about an hour for each batch and no contams yet (near end of colonization on the first batch).

The box said "5, 10, and 15 psi" in several places, never letting on that the one IN THE BOX was just a 10psi (I figured, if they list all three on the box then it must do all three). Of course once you get it home and check the manual it says "this model only does 10psi" - WTF? Felt like a bait and switch, but I also didn't feel like taking it back (it was cheapest one there). Boxes for one model should not be used to advertise what the OTHER models can do, unless it's in a spot that makes it obvious, like headed with "check out our other models, which can do:"...

No problem at all. Mime is adjustable and I use 10 psi for 45 min. Very often 15 psi can cause the brf to start to cook or carmalize and it takes way longer for the spores to start.

Here is a log that used 10 psi and it seemed to work well.

Ive done 12 jars so far @ 10psi for an hour and havent got a contam yet.

i have that same mirro one, i usually cook for 45 minutes and i havent had any contams yet.

Note, if you turn off the heat after one hour of the rocker rocking gently, it will still be at pressure and heat for another ten minutes or so anyway in the first part of the cooldown, so you end up with around the 1:15 suggested, without having to do 1:15 plus the cooldown. One hour seems just fine and safe at 10psi.

Magash: cool info on positive aspects of a 10psi PC, thanks, hadn't considered that. So far I just use whole grain brown rice though but when I do go for grains (which is next, probably WBS but maybe corn) this will be good knowledge.
