Well, I suppose one of my primary problems is that my casings had a pH of about 3-4, but I decided to go ahead with it anyways, since that's what the original Ryche 50/50 casing mix was. (depending on the pH of the water you used)

They were also allowed to get a little colder than would be considered proper.

I suspect the pH as the primary cause of the problem, as I don't even want to think about rare pathogens. (thanks for the paranoia Kast :) )

I'm still having a bitch of a time finding Hydrated lime; but the fight goes on.
