you're asking us to tell you if something that apparently has a "chocolate ring", "grows in a cow pasture" and has a "white stem" is edible then take the blame when you die?
Follow the identification guidelines. And at the LEAST post a picture next time.

Do not eat them. They don't sound like liberty caps to me.

The caps should be more olive brown than chocolate brown and there should be some coloration on the stem, brownish-white instead of white-white.
The mushroom you described could be any number of things and should be treated as poisonous until you get a positive ID which confirms otherwise. For info on how to properly request an ID to species, look here:

It's really hard to say. If I were you, I would go back to the place where you found them, pick a fresh specimen, and then follow the protocol for requesting an ID listed here. http://www.shroomery.org/forums/showflat...;o=&fpart=1
Especially important is the spore print color which can only be obtained from fresh mushrooms. Whether this is purple-brown or rust- brown could mean the difference between and active and a deadly mushroom.
On a side note, it is early for liberty caps, though some have been found in the UK already. This makes me doubt that the mushrooms you found are Psilocybe semilanceata.

Hello and tere tulemast Shroomery'as! (?)
A couple of hours ago I came back from a 8 days holiday around Estonia. And of course I did some mushroom hunting I checked quite some pastures and grasslands all around Your country, but most of what I found were Panaeolus foenisecii (in abundance pretty much everywhere I went) and Conocybe lactea (mainly in the eastern parts of Estonia). I would recommend You first to consider them to be one of those species. I doubt they are Psilocybe semilanceata (check this thread for more information about this mushroom) because the season is not here yet (Liberty Caps need lower temperatures and more moisture). I didn't succeed to find any psychoactive species during my visit in Estonia
Panaeolina foenisecii (=Panaeolus foenisecii) - inactive
Conocybe lactea - inactive
