Heyy.. hypathetically speaking, if I had several jars of grain going, and a couple of them were almost fully colonized, but the others were just starting to show growth, would it be a bad idea to wait for the others to finish before turning them into a casing? How long could a fully colonized jar be kept in storage? They'd be in a dark place at room temp (between 70 and 80 degrees).

I'd just stagger them out as they grow....much better to keep growth momentum than to let them stagnate.

Sticking them in the fridge is the best storage option if you really want to wait.

just case them as they finish colonizing. you can find casing containers appropriate for any amount of substrate so it shouldn't take 6 or so jars to make 1 casing.
