Hmm...well it is a fairly cheap gauge, I'll give you that
But there is zero visible condensation on the walls or roof of the terrarium..I dunno if this is a sign or not

Condensation will only appear if the walls of your terrarium are cooler than the inside temp. This is dewpoint. Wet perlite in an airtight box will give you humidity in the 90`s.

Ok
I've got a plexiglass cover for my terrarium, so that's not a problem anymore, but how much light is necessary each day? (between 6 and 8 hrs would be the most convenient within my schedule)

Due to stealth reasons I dont' want to have to cut a hole in the top of my otherwise inconspicuous rubbermaid terrarium, it may be a foolish questoin but can I just chuck a little flashlight in there pointed at the ceiling (it will reflect at bottom) for a few hours a day?

Hm...might work...i dunno if it would affect temperature though, it might
I have to be wary for stealth also, so what i'm doing is putting a piece of plexiglass on top of my crate, right before I go to bed, put the crate in my closet and keep the light on. I remove the plexiglass and replace the crate lid in the morning, and turn off the closet light (i also fan at the same time)

Eek, you'd spend more in batteries than the shrooms are worth. Only way to make that really workable is if you got a couple of sets of rechargable batteries and rotated them.
I used to have a rechargable "emergency" light that would be perfect for such a setup. It had a normal flashlight bulb/reflector in one end, and a small [6" long, maybe 3-5 watt] flourescent tube down the side. The built in battery would keep the flourescent tube running for about 4-5 hours on a full charge, and it put out quite a bit of light. They do sell small battery operated flourescent lights at most hardware stores. They're made for sticking under kitchen cabinets or in closets where you need extra light but don't want to fool with running a power cord. You should easily be able to attach one of these to the inside of your rubbermaid tub's lid.

Anybody ever see those wind-up appliances they sell for emergencies? They started with just radios, and i've even seen some tv's, so i wouldn't be suprised if they make flashlights like that.

just drill a few pinholes in the top, this should be enough light to tell them which way to grow, that's what the light is needed for.
