quarts of millet

Well I'm gonna cook up some quart of millet, I did some pints a week ago and they went sour. This time I'm gonna soak, simmer, pc and hope for the best. What I'm wondering is what is the biggest factor in wbs going sour, I'm having a streak of bad luck with millet, it always goes sour. Before I was just soaking or just simmering, then pc. This time I'm going with all of the above. In the past I don't think my water content was right, once the seed is soaked and simmered: should it squish, be firm but still squish, or more on the hard side?

I find the best way to achieve a good moisture content in WBS is to soak for ~12 hours, drain very well and PC.

Last time I saoked I saoked for 24hrs, loaded, pc'd. That time the seed was too dry, this time i'm gonna simmer it before pcing.

Yes simmer before PCing, BUT drain well.

And eat a little, see if its soft but not completly cooked, see how much water is in it.

Swim does this with popcorn, and he gets the moisture content right with the skill of  a chef :yesnod:

I like WBS better then straight millet, its easier to work with IMO, and it does have alot of nutes.

I had a hella time lately generating grain spawn. Anyone with experience knows how disturbing this can be. I was using milo and my method was to steep in boiling water. For some reason I had always cooked it to the point where it practically soft. Up until this point this had worked fine. However, after turning out 100 failed jars i had had enough and went back to the books to figure out what i was doing wrong. Now, i soaked for 24 hours, drain , and load jars. I increased pc time to 90 minutes. up from 60. I would also like to point out it is imperative to regularly check the gasket on your pc. Mine had shrunk slightly preventing the pcer from reaching proper pressures. All i needed to do was rub down with mineral oil and slightly stretch. And lastly please please regularly replace the hepa filters in your hepa filters. I had depended on the replace filter light which was obviously inadequate for my purposes. I know regularly replace my hepa even though they're one hundred buck a pop. After examining all of my processes you can see how I was able to reduce contamination levels.

after cooking 22quarts today it seems that draining better than i was should help, i hope that was my prob before. i soaked the millet for 16hrs then simmered till it was soft enough i could mush it with my fingers. i rinsed it real well and let it strain for a half hour. if all these jars actually work i dunno what i'm gonna do with 22 quarts, i hope i have friends interested in growing....

i've gotten so fed up with mixing pf jars one by one, i hope i get this millet to work, next time i'm gonna try rye berries

I had major problems with WBS, some of the grains go all slimey and gooey when PC'd, and it fucks up the whole jar. Millet is MUCH cleaner.

I can't say I like millet or WBS over Rye, because I havn't ever used WBS or millet...but I can say I use rye and it so far has turned out good.

When I'm going to case the grain directly I like Rye berrys. When I'm gonna use spawn for bulk I like WBS or millet, or brf cakes with a cheese grader.
Rye is probably one of the easier grains to start out with because it is a larger grain and is harder to turn to mush.
