I've been addicted to a certain salad lately. It all started at the organic market on saturday when I finally gave into temptation and bought this Italian sun-dried tomato tapenade in a jar that is the most expensive shit ever. I made an awesome salad dressing by mixing a few spoons of the tapanade with quite a bit of olive oil, a small slug of balsamic vinager, a pinch of oregano, freshly ground black pepper and a finely chopped clove of smoked garlic.
For vegetables I got some baby romaine lettuce, alfalfa sprouts, finely sliced a small fennel bulb and quarted some cherry tomatoes. The top layer of the salad consisted of crumbled soft goat's cheese with garlic and parsley in it, some crispy organic bacon that was still warm, chopped calamata olives and toasted pine nuts. I have had the same exact dinner every night since saturday, it is so damn good.
