dilemma: PF birth to fruit in 8 days?

First grow.  Inoc'd 4 PF jars on July 8, two of them are at 95% colonization.  One of those appears to have some myc knots, so I'm thinking about birthing tomorrow.  Just turned those two upside down today; still in the incubator at a constant 80 degrees.

Here's my dilemma: I won't be able to babysit the cakes starting on July 28 for about 5 days.  If I birth those two now, what is the likelihood they will fruit that soon?  Would I be better off putting them in the fridge until I return? Or just leave them incubating?

My other thought was to either do a grain transfer to rye or case the cakes & let them colonize some more while I'm gone...

My fruiting chamber is a PMP setup.

I'm excited to see that my 1/2 pint PF's colonized in only 12 days -- they're a Mexi-cub variety.  Thought I'd be waiting longer...

Ah, the sweet smell of mycelium.  I love it!  :laugh:

if this is your first grow make sure you let the pf jars sit for at least a couple more days when you think they are finished to makes sure the whole substrate is colonized. also casings give more of a yield than cakes do and are not that difficult to do as long as you remember to be as sterile as possible. Therefore, if you are looking for a larger yield why not case two of the jars before you leave and allow the casing to colonize and just hold off on birthing the other cakes. Then when you return birth and this should be about the time your casing is ready to go into the chamber as well. hope this helps

That sounds like a plan. I've been reading so much lately; so many teks. It's easy to get a little overwhelmed with choices.
