gonna need some recipes

I'm gonna do a beer battered fish fry with the family this week.

I'll do a halibut steak with mango salsa which is real nice and tasty.

I've heard of a secrete recipe called "poor mans lobster" or something like that were you boil the halibut with water and sugar and dip it in butter and its sposed to taste just like the lob.

If any of you know how to make this please post or any other suggestions as well.

yea it has a similiar texture to lobster. creamy dill lemon sauce is really good on it too.

BOILED HALIBUT (POOR MAN'S LOBSTER)

Add 1 teaspoon salt and 1 teaspoon sugar to each quart of water. Bring to the boil. Drop in bite sized pieces of halibut. When fish comes to the top of water, it's cooked. Serve with melted butter and lemon if desired.

I take the halibut, put it in a foil pan, drizzle with olive oil, add crushed garlic, salt and pepper, some chopped tomatoes and basil. Cover with foil and throw on the grill. It's really good

yeah the "real" recipe is monkfish

but it works well with halibut I hear

BioTek - thanks dude that sounds about right - I'll try it Thursday night and let ya know how it turns out.

I'm also going to try it with cider vinegar and old bay instead of sugar.

Halibut Tacos.

Take your beer batter fried halibut (double battered is best), corn tortillas, fresh salsa and some sort of slaw made from cabbage.

If your already frying fish, Tacos would be a good extra to add to the table.

just do plain cabbage, thinly sliced.

traditional fish tacos should be nothing more
than the fried fish, some lime juice, pico de gallo
and the cabbage.

if you do make a slaw instead of going with
plain cabbage, go easy on the dressing and
other ingredients.

the fish should be the focus.

the poor mans lobster kicked major ass - it really does tasty pretty close

just make sure you don't over cook it as it gets tough

I did about 20 lbs of halibut and salmon in a beer batter - you can get a mix at any store

The mix has a nice light fluffy texture. I used bisquick, beer and Johnny's seasoning to make more batter and I think this one tasted better, but the tuxture was more heavy. So I guess the batter mix with some old bay thrown in would pretty much have to be the shit.
