Depending of culture probably aborts... if you're lucky it will reduce metabolic activity and go into a wait for further instruction... but I can't really see that with cubes. At least not for very long maybe a day or three but :shrug:

If you adjust the ph with some hydrated lime it could be a substitute... or some jiffy mix/ cactus soil.

Without raising the ph it will just continue to colonize it which defeats the purpose of a casing layer....

BUT with all that said- it doesn't really NEED to be cased. Especially with a decent sized top layer

It's also an acquired taste... I think what started me was a good ribeye with sautéed mushrooms in garlic butter. Served on top.
Maybe make a little gravy with the drippings too....mmmmmm

It's just half pint WIDEmouth glass jar that I used to do no pours in...
With tyvek paintsuit filter secured by the ring ....talk about durable filter.

I will post pic of another one I've still got from same time period, in a bit.
though it didn't look as good as the one that brought me back from hiatus few years ago.

Well in my native language Grifola frondosa is called 'oak hare', I always assumed the hare part was connected to the taste. Wouldn't for the life of me know how hare or chicken tastes though, so it's merely a guess.
The oak part speaks for itself of course. Seen them destroy old growth oaks.

a top layer has proven effective for pe varieties greater than or equal to a true casing. some are different but generally speaking it doesnt matter. I would rather not go through the work of adjusting ph and pasteurizing unless im doing something special. Pasteurizing casings is fine but if you do use pickling lime to adjust. like LD said jiffy mix or cactus soil works great. good luck.

Fresh mushrooms are always better than store bought in my experience.  And every species has different flavors and textures, so cooking them all like agaricus won't do them justice.

Shiitake, Wine Cap, and Hen of the Woods are my favorite three to grow.  Hen is more earthy/umami than button mushrooms with a better texture.  Fresh Shiitake have better flavor and texture than store bought.  Both are great in eggs and burritos.  And Wine Caps remind me of radishes but without the sharpness.  I like it for stir fries.

If you like seafood, Lion's Mane is a great substitute for crab or lobster.  Similar texture without the fishy flavor.  Risotto and po boys are favorites.

And if the C mushroom your wife wants is chicken of the woods...  It's delicious and a pita to cultivate.

I'm late to the pizza party but this is legit.

There are only 3 steps that you SHOULD do that I don't think Kenji really clarifies. 

  •   Add 2-4 Tbsp ( 1/8 - 1/4 cup) of olive oil to the pan BEFORE putting the dough in to rise the second time.
  •   When the top is done the way you like, use a spatula or something to check the bottom.  If it is not golden brown finish cooking it on the stove top on med to medhigh until it is.  We have to do this every time because preheating the cast iron and trying to top it makes the whole process a pita
  •   Make the dough 24 hours beforehand.  And let the yeast do their thing!


This is basically a recipe for foccacia bread as well, but hot dam if it makes a fantastic deep dish pizza.

This is also the same no knead bread recipe that you can make actual pseudo Italian bread with, just like the pizza, chop the dough in half after the first rise.  Each half is a pizza or bread loaf.

i coffee grind them to a fine dust, pour a small pile on my tongue and wash it down with orange juice. no squirmers in ur teeth and virtually tasteless. i always eat at least 4g of powder cubes so its still an endeavor.

i did saute fresh ones with onions/garlic n herbs once. delicious and very effective. the way they turned blue and glistened with the oil n onion was a trip in itself to behold.

Hare is nothing like rabbit.  Rabbit is a white meat more akin to chicken or other white meats, and hare is a RED meat.  For cooking applications I go almost exclusively slow cook on hare, my favorite recipe for it being Sardinian hare stew featuring saffron and capers.

I guess they ARE chanterelle?

This is the one my wife wants me to grow. It was a few months ago and I've learned a lot since then but I remember feeling overwhelmed by how websites were recommending I grow them.

But it could just be because I didn't do my research on shroomery back then :p

Wait we can't grow any mycorrhizal types, I thought fly agaric was mycorrhizal? And couldn't you find wild chanterelle spores and then plant them in conditions in the wild that are conducive to them growing?

I know the websites with instructions to grow em all make it sound crazily daunting to even try, but they didn't give them impression it was legit impossible. Not that this surprises me given how inaccurate the mushroom info I find on the random net is nine out of ten times :p

It is debatable but imo it's not impossible, just absurdly out of reach for the home cultivator. You might need a nice medium size evergreen bonsai, loads of materials and lab equipment, and a lot of carefully dedicated climate control and experimentation, over years to grow something like amanita indoors. I think it could theoretically be done but no, nobody has done it popularly to any extent.
