here's my question;

i cooked 5 quarts of grain 5 days ago; can they wait awhile to innoc? how many days

I've let mine go a week 1/2(popcorn). Also if theres a some water from the condensation, I flip it 4 a day and then noc it up. Some ppl use a little verm on the bottom to soak up the excess water or condensation.

I like to innoculate them fresh as can be(the VERY next day after Sterilization), it DEFINITALEY works the best!
But if for some reason you can't the very next day, you still can innoculate them a few days later(I would say only up to around 2 weeks though, my personal prefrence, any longer and your asking for a low yield and possible contaminants).
*Remember fresh is the best, 2-weeks into it and its starting to get a lil old.*
