Why is it better to fruit in a bag instead of a shoebox for questionable/bacterial spawn?

I cultivated some icky looking spawn a while back and it was suggested to be put in a ziplock instead of a shoebox. Why is this a better strategy? Being a noob who didn't want to deviate from my original plan, I put them in a shoebox and ended up with a trich sunday. Lesson learned.

As an aside, how's this new jar looking? Worth a try in a shoebox or should I bag it?

In a ziplock you’ll be able to go a higher grain to substrate ratio so it’ll colonise and fruit quicker before contamination sets in, ideally 1:1 whereas a shoebox you’ll be forced to go higher as there’s more volume to fill and get a good depth.
Jar looks a little suss, lot of condensation which could be environmental and I might be wrong but it looks like metabolites in another image, not 100% though, if you’re worried you can go the ziplock or even top fruit it for a higher chance of fruits, either way you’ll get experience leading to better grows in the future (:

Thanks for the detailed response! That makes perfect sense. I think I'll try out top-fruiting.

Fill the jar almost to the brim with field capacity coir then stick a ziplock over the top and fix it with an elastic band below the thread, make sure you prick holes with a needle or pin every couple of inches around the bag for fae.
You will need to rehydrate or mist regularly after it starts fruiting as there’s not enough moisture in the coir to sustain them, good luck!
