It'll be kinda like the TV show... I'll post a main ingrediant then you shroomerites post at least one creative dish using the choosen food as the main ingrediant

Of course, it'll be hard to determine the winner since we can't actually taste the creations, but it'll be fun to decide what sounds better  :thumbup:

Pasta Squash Desert.

Butter, Cinamon and Sugar is all you need.

Just bake the squash till fully cooked and then carefully shread out the long squash fibers. These should be kept long in length so they look like spaghetti.

Next, melt 2 sticks of salted butter and add 1 cup sugar with 1 tbst of cinamon. Mix all together in a large bowl , then toss the squash in the dressing till coated.

Display on a decorative plate, grate on some nutmeg and garnish with mint.

Basic and simple but I loves me this stuff.

Baked Speghetti(sp) Squash.

-Cut squash in half length wise.
-Scoop out abit of the speghetti like inside,
-Season the inside, salt pepper, minced garlic, butter.
-Bake.
-Bake until cooked nicely, grate some cheese on, let cheese melt.
-Take out, cool abit, and dig in.

Squash Ricotta or Feta Ravioli

-Half squash verticaly, scoop out entire inside
-Save the good stuff
-Add edible good inside's, your cheese, garlic, salt and pepper, and a bit tomotoe.
-finish your pasta, get ready to fill ravioli, fill ravioli, seal raviolli, boil ravioli.
drizzle with olive oil, and top with sauce of choice.

I only felt like coming up with two dishes.

ha, everyone did the spaghetti squash...

squash is a great base for soups, when pureed,
I make an italian soup with pureed squash, some
tomatoe, roasted garlic and lots of cheese.

also, summer squash is great as a sweet side
when sliced, simmered in a little butter and
sprinkled with cinnamon.

zuchini squash sliced thin, dipped in egg, battered in breadcrumbs with parmsian cheese, then pan fried in olive oil. Dippen in ranch dressing.

I like butternut sqaush myself. Slice that fucker up and saute it in a pan with some butter and salt and pepper.. or perhaps some sugar. Good shit.

Zucchini Pie

4 eggs
1 cup of cheese (Parmesan and shredded mozzarella) You can use cubed mozzarella, but it doesn't come out as good.
3 cups of zucchini. Cubed very small
1 cup of Bisquick
1/2 cup of Mazola. You can use any oil, not olive though.
1 small onion
salt and pepper
parsley

Mix all ingredients together. Bake in a pie pan in a 325 degree oven for about 45-60 mins. Depending on your oven start checking with a tooth pick after 30 mins.

***You can fool around with the amounts. I do, just don't fool around with the amounts for Bisquick and oil.

Amuse Bouche:

Butternut Squash Soup

Carmelized onion 1c
butter nut squash 2c
vegetable stock 4c
garlic 6 cloves
shallots 2 sliced thinly
salt
pepper
balsamic vinegar

cook it down and buzz it in a blender.

Appetizer:

Baby Squash and peekytoe crab salad with zucchini martini

1lb peekytoe crab meat
4 oz's lemon aioli ( 3 egg yolks, lemon juice to taste, 3 cloves garlic, 1 tbsp whole grain mustard, salt and pepper, and grapeseed oil)
sliced sauteed baby squash (maybe about 10 of them)
chopped chives
chopped shallots

martini:
zucchini - about 4, skin and meat only - no seeds or core.
shallots - about 6 sliced
4 cups of vegetable stock
2 cups of milk
salt and pepper

cook down, buzz in blender, thin to appropriate consistancy with veg. stock.

An egg shaped portion scoop into a pretty bowl for the salad. The martini is served in a martini glass, and garnished with a half of a tempura fried squash blossom.

Halibut with Squash Blossom sauce and Baby Squash Rissoto

Halibut is seasoned with salt and pepper seared on both sides, and put in a 400deg oven until done.

Rissoto is arborio rice that is cooked slowly until translucent with clarified butter, then white wine is added (chablis) and cooked until almost dry. Chicken stock is added 1 ladle (2oz) at a time, and stirred until creamy and no pooling. Once the texture reaches al dente cooked sliced baby squash are added and grated parmesano reggiano.

Squash blossom sauce is 2 cups vegetable stock, 1 cup milk about 4 shallots and some essensia (orange muscat dessert wine) cooked until the shallots are soft. Squash blossoms are added at the end so they don't lose color and cooked down for about 2 mins in the boiling liquid. Blend it all season with salt and pepper and sherry vinegar.

The dish is served in a bowl, sauce goes on the bottom of the bowl about 1/4" deep. Rissoto is spooned on top. And the halibut is placed on top of the rissoto. It is garnished with a tempura battered and deep fried squash blossom on top of it.

Squash Foo Yung with Dried Tomato Sauce

Ingredients:
6 egg whites
1 egg yolk
1 1/2 cups spaghetti squash, cooked
1/2 cup finely chopped broccoli
1/3 cup shredded carrot
1/2 cup chopped red pepper
1 Tbsp fresh basil, chopped
1 Tbsp fresh dill, chopped
1/4 cup pepper
3-ozs. dried tomatoes, rehydrated according to package directions
1 cup fresh tomato, chopped
1/2 cup low-salt chicken broth
1 green onion, chopped
1 clove garlic, quartered
1/4 tsp pepper

Instructions:
In a medium bowl, beat egg whites and yolk until frothy. Add the cooked spaghetti squash, broccoli, carrot, red pepper, herbs, and pepper. Set aside. For sauce, in blender or food processor place all sauce ingredients. Cover and process until pureed. Spoon into saucepan; warm over low heat until heated through. To cook pancakes, spray a non-stick skillet with cooking spray. Drop batter, 1/4 cup at a time into skillet. Cook over medium heat until browned; turn and cook until set. Place on heated platter and keep warm until all are cooked. Serve topped with sauce. Makes 8-10 pancakes.
