chicken burgers
    #28784699 - 05/23/24 07:47 AM (1 month, 3 days ago)

I have chicken burgers that say pan fry or bbq

Pan fry for 7 minutes a side, or BBQ for 6 minutes a side

I want to cook them in the oven on a pan with a wire grate over it

How long should I cook them?? At what degrees??

I'm thinking like 350 for 12 minutes

Idk tho

I need to cooke 8 at once that's why I don't want to pan fry them I'd have to do one at a time

And I don't have a bbq

I need an answer by Tuesday please

A hot pan fry would be the best preparation method in my opinion, as it can help add a bit of crispy texture around the edges of the patty (a proper bbq grill can do this as well, but you have less control and it can dry the patty out or you can lose pieces of the patty between the grates as chicken burger patties are notoriously crumbly).  Chicken patties can be very wet, depending on the chicken you use, as a lot of chicken cuts carry retained water from their processing.  Because of this, cooking all 8 in the oven is likely to have them swimming in liquid when you pull them out.  So if you do the oven method, make sure you use a pan with a rim on it and not a flat cookie sheet!

As for temp's, 12 minutes at 350 is probably too little, unless these patties are pre-cooked or super thin.  For a raw chicken burger patty, I would bake at 375-400 for 20 minutes, on parchment paper (so they don't stick and tear when you try to pick them up).  Ideally, you'll have a meat thermometer handy and poke them to see if they're at or above 165*F for proper doneness.

Also we're going to want to see some pictures of these things when they're done! :yesnod:

Thanks, I have a wire grate on the pan that sticks up half an inch, so the patties aren't on the actual pan, I cook almost everything that way so air gets underneath, so they won't be swimming in juices

Maybe I'll do 375 for 20 minutes, I don't have a thermometer 🌡️

FYI, the raised wire grate oven technique, depending on the size of its gaps, would be problematic for a raw room-temp chicken patty and potentially problematic for a frozen-raw patty as well, as the meat might sag down through the gaps between the wires, in some cases breaking the patty, or in others just making it difficult to lift off the grate without damage once they're done.

If your patties are pre-cooked, that shouldn't be an issue.  Your patties do appear to at least be frozen, which can mitigate the issue even if the chicken itself is raw (although I'm guessing given the packaging that your patties are pre-cooked).

For what it's worth, I like to buy fresh ground chicken thighs from my butcher and form my own burger patties with a handful of breadcrumbs, an egg and various spices (at least salt and pepper and garlic but some fresh thyme and onion would also do well) in the mix.  Fry/grill on a flat top til golden brown and delicious.  It takes a little finesse to get used to working with the sloppiness of the raw chicken, but they turn out so juicy and delicious!
