I'm only growing for myself here and feel like I'm going to have more than I know what to do with after my first attempt. PF Tek rules! 
Edit: as much as I love the Hitchhiker's Guide, I think it steers people to growing bulk immediately when PF Tek seems like a more noob-friendly option. I feel like there's a new "is this contamination?" thread everyday from first timers going straight to bulk. And there is a whole lot of "yes, that's fucked" replies that make me think it's not the best approach for a new person.

Another noob upvote for Nichrome’s advice. I started with PF Tek and based on that success I’m walking the Hitchhiker’s path. Definitely a step up and I’d be in trouble without all the help I’ve received.

Been growing for a long time but I've always had trouble with oat spawn bags. I use about 4-5 qts (little over half filled each) for each bag and I pressure cook for 2.5 hours, is this not enough? I read somewhere that 4 hours may be more sufficient.

More time will be your friend.
It's likely the heat isn't getting to the middle of your bags. One quart jars will sterilize faster than like half gallons for instance (one reason one quarts are recommended & widely used).
PC technique should also be checked. Be sure to vent for 10 minutes for instance, and that the pressure doesn't dip below 15 during the time.
Try longer, and leave a bag alone and see what happens in addition to using it for spawn - bc I'm sure you don't wanna wait to see if it works first :P

Those are cubes. The only way to know if they will print is to try and print them. Albino fruits lack pigment at all stages of life, these are leucistic.
Ahhh ok. Ive seen the term leucistic used but never bothered looking it up. Thanks for clearing that up. I know theyre cubes just not sure if theyve actually got PE genetics in them. They dont at all resemble pics ive seen of other lucid gates grows. They sure took their sweet time fruiting so I guess thats good. They also appear to be dropping spores on the stipe, so it seems I will be able to print.

The loss of colour in shroom maturation is because they only expand already existing cells, they don't produce any more once the pin is formed, so you have less "dye" to cover the entire stretched surface if that makes sense
Although with melanin it seems to be a bit weird since it's usually used to defend organisms against strong UVs and whatnot, so a strong light might still effect it to some extent

Are these okay to consume? These fruits came out of the dehydrator a little white. They are Ghost. Top ones are from the first flush. Bottom are from the second flush. Dried at 140°F for about 18 hours.

Could they have been overripe before they went in? Here's a pic from before

They look fine. Looks like you had some myc on top of the caps, the white bit should feel velvet-y if there's enough of it

Will a proper light with a 12 and 12 on/off cycle improve my grow compared to just opened blinds? Or would it not be worth the effort?

I don't think it would change that much, people do suggest that a strong light will stimulate pinning more but I don't think I've actually seen any proper comparisons made

Did my first agar to grain . It's been about 3 days and the piece I transfered was initially the size of a pencil eraser. How's it looking ?

Thank you! I was worried, I had to fridge the plates for 3 months due to life, and was worried it would raise the contam risk, or vitality of the mycelium.

From the look of your grain you probably did a good job with the rest. You can keep a plate in the fridge for a long time. Usually they are pretty eager to please after a lengthy cool off.
If you do keep plates in the fridge and worry about contamination, just keep the plate in a ziplock. Baggies are plate condoms.
