How do you all know when your cakes are ready to dunk?

This is one of my cakes inoculated with Golden Teacher on the 15th April to present day, what do you think? Ready or leave a bit longer?

I can tell you what I do with great results. I wait a 5 days to a week after it's fully colonized, Dunk for 24 hours in spring water (my house water). Rinse the cakes off after dunking and roll them in fine or medium grade vermiculite. (I prefer fine but can't always find it). Then I put them in a water to tub fruit. I mist the vermiculite a bit then ignore it for a few days. After a few days you will see mycelium starting to peek through the vermiculite in places. All you have to do is now monitor surface conditions to make sure nothing is drying out.
