Keep em in the freezer and they will last forever, the longer you hold them at room temp the more you risk contamination getting a foot hold. I've got a pretty big PC and always have more jars than room in the incubator, so the extras get frozen. Just thaw overnight before using.

My last batch was sitting around on the kitchen counter for a month before innoculation. No problems as of yet.
