casing question...

ok i got a question that my be dumb but im a newbie....in casing after the first yield what do u do to get more yields ive read about dunking an all that as far as cakes go but what do u do in the casing method just not dunk them???? leave the cheapshots at the door please its only a question.....

Correct. The most important thing is knowing *why* you are dunking them. Then you can easily determine when they should or shouldnt be dunked, or if an easier approach will work just as well.

i know why they get dunked i guess what im sayin is why isnt it needed in the casing method and if it is needed how do ya do it....

Dunking can be used with casings, and its definately useful. Scratching the casing layer is usually useful as well.

There are several methods to dunk a casing. The simplest is to fill the pan the casing is in with water, up to the underside of the casing layer. When its time to drain the water, simply tilt the tray to the side.
