Quinoa is much more nutritious than brf, probably would work better. Never used it as a flour for cakes, but have used the whole grain many times with great results.

Quinoa is probably 4 times as nutritious as rice, it contains many more vitamins and amino acids. You could live quite well on it alone,, on rice you'd look like a concentration camp victim after a while. I've never tried the flour, but do have some cambos growing on a "whole grain"https://files.shroomery.org/files/287567-qrmix.jpg>

Shroomzilla...what measurements did you use for that BRF/verm/quinoa mix? Quart jars?

It was 1 part whole quinoa [health food store], 1 part long grain brown rice [generic store brand], and 2 parts verm, mixed in a small batch and spooned a pint jar. The quinoa was soaked and rinsed several times to get rid of the natural coating [sapoins sp?] and to let it hydrate a bit. I guessed at the water and came up a bit short. The dryness really slowed down colonization, but what's there is very rhizomorphic. This was just a "test" so I didn't want to risk contamination by injecting any more water...just let it ride. The jar is only 90% colonized but its starting to pin like mad....too bad its in a necked jar and will have to be broken up to get it out. I'm actually considering breaking the jar to get it out in one piece. Yes the jar is upside down, a bit of a thing I've started doing. The very bottom of most jars seem to be the last bit colonized. I've started inverting my jars at the 1/2 way point so there is a bit of air space at the "bottom", this really seems to speed that last little bit of colonization. Also, if you've gotten things too wet, the water will run down into your verm "topping" and not let the cake sit in the excess water. The biggest advantage is that it really speeds up pinning of you do PF style cakes rather than casing. Since the new "top" has free air above it the mycelia grow much better up there. This also eliminates having a bunch of fruit coming out of the base of the cake once birthed.
